Sure,

Here's one of my favorites.


3 cups beef broth
4 cups chicken broth
3 tablespoons olive oil
1/2 cup finely chopped shallots
2/3 cup orange marmalade (apple jelly works just as well based on preference)
2-5 tablespoons chipotle chilies in adobo sauce (depending on tolerance)
1 tablespoon water
2 teaspoons cornstarch
2 1-pound pork tenderloins


Mix the stocks togeather and boil for about 45 minutes to greately reduce the stocks.

Toss 2 tablespoons olive oil in a heavy large saucepan over medium-high heat until heated. Add the shallots and sauté for about 4 minutes. Add the stock mixture, marmalade and chipotle chilies. Simmer for about 5-6 minutes.

Mix 1 tablespoon water and cornstarch. Stire cornstarch mixture into stock mixture until sauce boils and thickens, about 5 minutes.

Preheat oven to 425°F. Heat remaining olive oil in heavy large ovenproof skillet over high heat. Add pork and cook until brown on all sides, about 4 minutes.

Move the skillet to the oven and bake until thermometer inserted into pork registers 155°F, about 15 minutes. Let pork rest 5 minutes.

Bring sauce to simmer. Slice pork into 1/2-inch-thick medallions; arrange on plates. Spoon sauce over and serve.

Chicken Enchilada Casserole

1 can (12.5 ounces) of chicken breast
1 package of hard, corn taco shells
1 can (10 ounces) of enchilada sauce
6 ounces (approximately) of grated cheddar cheese

A. Spray oil on botom of a casserole pan.
B. Pour some enchilada sauce to cover the bottom of the casserole.
C. Cover the sauce with broken taco shells.
D. Mix the chicken, cheese and some enchilada sauce in a bowl... perhaps with some fresh (uncooked) corn kernels.
E. Spread the mixture over the broken taco shells.
F. Cover the mixture with some more broken taco shells.
G. Cover this with the remaining enchilada sauce.
H. Cover with grated cheddar cheese.
I. Bake at 375 F covered for 35 - 40 minutes.

Serve with avocado and tomato slices

Serves: 3 or 4 people

Shrimp and Soba in Peanut Butter Sauce

1.25 bundles of whole wheat soba noodes
shrimp
bean sprouts

Peanut Butter Sauce:
--------------------
1/4 cup of peanut butter
1/2 onion
1 peeled clove of garlic
2 Tablespoons of lemon juice
1 Tablespoon of soy sauce
a few drops of Cajun Sunshine hot sauce (or mince up a small green chillie)

A. Boil the soba noodles.
B. Blend the sauce ingredients in a blender with hot water until creamy.
C. Sautee the bean sprouts and shrimp.
D. Pour the sauce over the sprouts and shrimp.
E. Add the hot, cooked soba to the shrimp mixture and mix well.

Serves: 2
