How much AC do you need? Depends on the mobs you are fighting (and whether you are getting hit). The higher level the mobs, the higher you want your AC to be.
The AC penalty gets worse as you level. Right now, you don't loose much AC for being over the weight limit. I loose at least 6 displayed AC for ever pound I go over, though. So, should you worry about it? I'd say yes. It's a fundamental part of the monk class. Eventually you're going to have to pay attention to it or be hurt badly - so you might as well start early.
If you'd like some help, post your magelo or equipment list, along with all the stuff (bags, stuff in them, money) that you typically carry.

At lower levels, every pound (or stone) over the weight limit will decrease your AC by 2 or 3. This means that without your extra 15 pounds, you'd have nearly 600 ac. That's a pretty big jump in AC for a low level, so I'd advise you to get your weight down as much as possible.
At higher levels, you lose even more AC per 1 weight over the limit, so it's good to get in the habit of watching your weight now, before you get into any bad habits. Maybe you want to post a magelo of yourself so you can get some tips on equipment that will help you out. Also, look into getting some weight reduction bags if you don't have any already. A Rallic Pack, which goes for 600-800pp on my server, has 10 slots and 85% WR, and only weighs 1. You also might look into getting a Tink bag if you've got the coin. (And I'm assuming that with 550ac at level 11, you've got plenty of cash.)
Only other tip would be to not carry around any money on you. When I hunt, I end up destroying my copper/silver if I'm soloing, or giving it to the rest of the group if I'm with others.

Does you armor make a difference? If you don't think you need the AC, try taking off some of your armor. Wit that much overweight it might actually be an improvement.

The weight limit isn't as big a deal at lower levels. Just be careful of it since the penalty increases as you level. I think I was at least 5-10 over until I was in my mid 40s, I still got there.

You may not see much of a difference right now with your AC when you go overweight, but you will soon enough. You should get in the habit now of trying to reduce your weight.
Everytime you see a bank, deposit all of your coins. I generally only have coins on me if I know I need to buy something. After I buy it, the change goes back in the bank.
Do you really need to carry a backpack? If you have enough stuff you need with you at all times, try to find a weight reducing backpack instead of the standard backpack. If you can't find a weight redux bag, use a toolbox instead. Toolboxes weigh less then backpacks and are sold in Shadow Haven. They are even cheaper then backpacks, however, I cannot tell you the item size you can place in them (sorry!)
Some other tips:
Carry milk and grapes. These are the lowest weight store bought food and drink items. They don't last long, but you'll be making many trips to your bank anyways.
If you're in a group and you notice you have 100 gold pieces, ask the group if anyone would be willing to trade them for a few platinum pieces. Generally, you trading 100 gold pieces and receiving 5 platinum pieces is better then having to destroy all of your gold because you are overweight.
It's a monk's job to stay slim and trim. You will deal with this all of your time as a monk. With other classes, it's easy to forget about weight until you notice you can barely walk, but now that you are a monk, you must learn discipline with your weight.

If you want my advice...
At lower levels, cured silk is next to weightless and is decent AC. Higher up you go you can get Wu's, then spider fur and reinforced acrylia. Low weight armor, good ac. For rings, get the fire opal wedding (or was it engagement) rings. The ones with HP and AC. Do something similar with earrings, you want str, sta, agi, raw ac, and raw hp. The rest can take a back seat. Early on you want str, later on you want sta and raw hps. Trust me, when you start being the puller with FD split, you REALLY want extra hps so you can last long enough to get it back to the group.
Inventory management is vital for ANY monk. I only have a couple of slots, the rest are blank. One of them is my Rallic Pack. Wt Reduction bags are lifesavers for monks, get one as soon as possible.
Food/drink... try Fish Rolls and Fizzlecutter 5000 formula. Fishrolls weigh .1 and are a banquet sized meal. You can make them by putting a fresh fish and a batwing inside a spit (or oven). If you're human, you've probably got tons of batwings you sell to merchants from the bats. Fishing can be easily done in either human home town. In PoK you can purchase both fish and batwings from merchants (far western area, go to bank, keep going until you hit a wall, follow it to the merchant area with the pool. The DE sells batwings, one of the barbarian fishermen sells the fish). Fizzlecutter 5000 is purchasable from the gnomish merchant over in queynos. it'll last forever too.
Always remember to change in your coinage if you have more than 10 of any coin while in a town that has a friendly banker in it. Dump any plat you don't need in the bank. You can always pull it out later if you need to buy stuff.
All monks need to watch our weight and keep in our fighting trim.

I'm going to try not to repeat what everyone else said. I do notice though I take a large ac hit after 20 stones at lvl 48. For container slots I use a rallic pack not 100%, but 5k cheaper. If I need other bags I use a shaman's medicine bag. 8 slot, .4 weight holds large items. A light weight backpack! I think they changed it recently I only remeber the bags being 6 slot. Oh well pleasant surprise! Also a good tip for fish rolls is look in merchants next to ovens, particuly the ones were they sell batwings/fish rolls.

One thing to watch out for. At lower levels it not so big a deal. But as you get up in levels, you will want to lose the weight.
Problem is. Do you have the gear to change to if all your stuff is so heavy?
Just slowly start collecting lighter weight stuff. Start early so it not such a hit to your bank account when the weight will be a big deal.
My monk was right around 14 to 16 and even over till about 15th level. When I could finally start getting lighter weight replacements for stuff. Now even carry 2 1-handers her start out weight is around 14 and with her 2hander start out weight is 12.
