Note: this recipe adapted from NYT: Minimalist. Good stuff though, now done it a few times and it's delicious.
1 lb large (pref deveined) shrimp
chopped garlic ~ 1-2 Tbsps
chopped ginger ~ 1-2 Tbsps
soy sauce
dark sesame oil
peanut oil
pinch salt
palmful of dried salted black beans (you might need to go to Asian food store for these)
1 or 2 heads of bok choy or kale or other bitter, crunchy green (collards would prob be fine)
1-2 cups of chicken or vegetable stock
Prepare some rice as side dish. 1 cup of stock can go into rice mix (optional).
Chop ginger and garlic.
Put cleaned, shelled, deveined shrimp (larger is easier to deal with) in bowl, dress them with 1-1 soy sauce and sesame oil. Add garlic. Let sit while you prepare other stuff.
Put palmful (or less) black beans into 1 cup or so water, let sit.
Wash and chop greens into 1-inch strips.
On HIGH heat, put peanut oil into wok or big fry pan. Stir. Cook shrimp until some start to turn pink, then return to bowl.
On HIGH, put more oil, add greens and ginger. Stir. When the greens start to brown, add 1 cup stock (wine, sherry also work but stock is best imo), and beans in their water.
Let mixture reduce (e.g. boil off) for a minute or two, still on high, then add shrimp back in. Cook until all shrimp are pink. Eat.
Enjoy. Should take about 30 mins start to finish, with rice on the side should feed four easily.
EDIT: Cost to me (I already had the sauces, rice, and beans) to feed four people was about $20 including the shrimp. Just thought I would add that in there.
