This is a great side dish to make while barbequing. I do it alot.
Slice potatoes, one and a half potatoes per person ( or just one per if they are big).
Lay out 2 layers of tin foil, cover the inner layer of one with butter leaving a 1 inch border butter-free around the edge.
Lay in potato slices in layers, salt and pepper and paprika on each layer as you build.
Put a few good nobs of butter on top. If you like, some sliced onions really add to the taste.
Then lay one peice of bacon along the top.
Close tin foil over the potatoes. The goal is to get it as air tight as possible. Double fold all the seems, etc... The idea is you end up with a pillow of tinfoil stuffed with potatoes, butter, bacon and spices.
BBQ this along with your meat, you may have to start this ahead of your meat. You need high heat, 10 minutes a side. No matter what, don't chicken out and flip it too soon, give it the full ten minutes.
If you managed a nice, air tight set of seems, the package will actually puff up as you cook, but if it doesn't, don't worry about it. It will still work nicely.
I first started doing this while camping, but the potatoes with onions and bacon are just so flavorful that I do it all the time now.
