So what is everyone's favorite way to prepare salmon?
I prefer to make a baked teriyaki salmon for myself and serve it with plain, white short-grain rice.

For me, Salmon is best served either baked or grilled. My two favorite ways (assuming salmon steaks) are ye olde aluminum foil wrapped salmon steaks with tarragon, sage, lemon juice, black pepper. and a touch of butter wrapped in foil then either baked in the oven or over the grill.
My second way to do salmon(steaks) is over good charcoal, but marinated for roughly 2 hours in a good chardonnay with lemon juice, black pepper, touch of dill, and sage. Overnight is too long of a marinate time for this recipe. A few minutes on each side grilling and voila, a simple yet tasty salmon steak!
Having said all of that, I'm no expert on the fish. This is just some simple stuff that works for me.

Not a big fan of salmon in big chunks. I do like it mixed up with smashed crackers, mashed into patties, breaded, and fried though. Other than that I really don't bother with it. On the other hand Tilapia, and Orange Roughy are both really good. Blackened for the tilapia, and grilled with butter and lemon pepper for the orange roughy.

I used to feel the same way as you Lenardo, but I later found this was because of the poor quality of fish available in my local market (Kentucky).
Then one day I happened to on a trip to Canada visiting family, and they all wanted to go for seafood. I ended up ordering a salmon pasta dish, and when I tried it, I went, "This is salmon? What the heck was I eating before?". I've been a die-hard fan ever since.

Just a tip for those that cannot get quality fresh salmon.
I live in Canada and can get it fresh some seasons, but in others I use....
Captain Highliner frozen wild pacific salmon.
It comes as 4 steaks in a vacuum frozen bag. And its frozen as its caught at sea so its frozen at its absolute peak.
Stuff is great when fresh is not available.
Uck, stay away from that thawed stuff many fish counters use.

Yeah, it's not always available when I goto Sobeys or Loblaws here in Ottawa. =(

Reason #2643 of Why living in BC is Better.
Now I want salmon, sigh.
Use brown sugar, white wine (or vinegar), worstershire sauce, garlic and onions to taste...
Wrap it up in tin foil (toss in some butter if you prefer) and grill for 10 min per side over med heat (bout a 1 - 1 1/2 thick cut).
Yummy!

I'm sorry to hear that Len. I'm somewhat in the same boat, but instead I love shellfish. Regular fish...icky...but I'm working on it.
