View Full Version : Pinto Beans (tasty, but bad for you)

Well figure I'll post a recipe that I am fond off.

4 lbs Pinto Beans (dry)
1.5 lbs Bacon
1.5 lbs Beef Link Sausage (make sure it's a dense sausage, nothing like eckeridge)
Olive Oil
Garlic Powder
Onion Powder
Chili Powder
Black Pepper
Salt
A Really Big Pot

Rinse the beans off, and toss out any little rocks or nasty looking beans. Toss beans into your pot. Add water until you've got about twice the height of the beans (so if the beans fill 4 inches of your pot, the water should hit the 8 inch mark on the pot). Put pot on high heat and wait for it to start boiling. Once the water is boiling slice up the sausage into quarter inch segments and drop into pot. Next slice bacon in half so it's not so long, fry it up and dump bacon and grease into pot. Add a dollop of olive oil to pot (I've never measured it out, around a second of pouring is about right). Then drop in seasonings to taste. Myself I put a good bit of garlic, black pepper, salt and chili powder, and a medium amount of onion powder. Then keep on a low boil, stirring occassionaly, until beans are soft. Usually takes me about 2 to 3 hours after I get all the stuff in the pot. Also I tend to check my flavor every 30 minutes or so, and add more spices as needed.

This would feed me and my roommate for a week. I use the bacon instead of saltpork because it does about the same thing, but you can actually eat it. Plus the bacon just kind of falls apart in the beans and makes them a little thicker. The olive oil keeps the beans from being so dry when you reheat them. Also as I said in the title, they are very tasty, and very bad for you.
